The 10% rule and why it exists
Veterinary nutrition guidelines consistently recommend that treats make up no more than 10% of daily caloric intake. The reason is not that liver treats are dangerous in larger amounts — it is that they displace nutrition from the complete and balanced diet. Dog food is formulated to hit specific protein, fat, vitamin, and mineral ratios. If 25% of calories come from a single-ingredient treat, those ratios shift in ways that are hard to predict and compensate for.
Beef liver is particularly relevant here because it is extremely rich in certain micronutrients — especially vitamin A, vitamin B12, copper, and iron. Small amounts are beneficial. Large amounts over time can create micronutrient excesses, particularly vitamin A, which accumulates in fat tissue and can cause toxicity in extreme cases (joint pain, bone changes, lethargy).

Training sessions: frequency vs quantity
The question "how often" matters less than "how much total." You can give treats in one long training session or spread across five short ones — what matters is that the total daily amount stays within your dog's treat budget.
For high-repetition training (recall, heel, complex sequences), break pieces into pea-sized bits. A standard Stewart liver piece can be broken into 5–8 training-sized bits with your fingers. This dramatically extends how many repetitions you can do before hitting the calorie limit. A 20-pound dog could technically do 60 reward repetitions per day at broken-bit size while staying within the 10% rule.
For occasional casual rewards (good behavior, greeting calmly), one whole piece a few times per day is appropriate for most medium and large dogs without any concern.
Dogs with specific health conditions
Overweight dogs: reduce the treat budget from 10% to 5% of daily calories and account for the calories in your dog's overall weight-loss plan. Liver treats are calorie-dense — they are not a diet treat.
Dogs with pancreatitis: discuss with your vet. The 10% fat by dry matter is moderate but not negligible. Some dogs with pancreatitis tolerate it; others need very low fat across all food sources.
Dogs with copper storage disease (Bedlington Terriers, some Dalmatians, some Westies): liver is high in copper. Consult your vet about whether any liver-based treat is appropriate.
Dogs on prescription diets: if your dog is on a prescription diet for kidney, liver, or specific metabolic conditions, the diet's nutritional balance matters. Adding significant amounts of a high-protein, high-copper treat can shift the balance the diet is designed to maintain. Check with your vet.
Using liver as a food topper instead
The crumble at the bottom of the bag — which accumulates naturally — is excellent as a food topper for picky eaters or dogs who need appetite stimulation. A pinch of crumble over kibble adds strong beef liver aroma without adding significant calories or requiring any piece-size management. This is also how you can use an older bag where the pieces have lost some texture quality: the smell is still present even when the texture is less crisp.
